		<description>I made this once as written and enjoyed it, and then made it a second time and enjoyed it even more with these modifications:   I used steamed cauliflower (2 heads) rather than potatoes as the binder, and I roasted the corn instead of steaming it (30min directly on the oven rack at 350 degrees, husk and all).  The cauliflower was so much smoother than the potato that I only ended up using about half the cream.  Give it a try!</description>
